It has a light straw yellow color, a not excessively grainy structure and a good compactness. Its taste has a well pronounced lactic base, the grainy solidity and crumbliness can be concretely appreciated. The paste is still soft, the flavorings that let it stand out can be clearly tasted.
It can be tasted during aperitif in combination with fresh vegetables and can be a very good snack for kids also together with fresh fruit. It can be enjoyed alone, as an aperitif in combination with a white wine glass or together with slightly spicy fruit mustard.
The rind, once cleaned through a knife and sliced into small pieces, becomes an excellent condiment for the tomato puree.
